First Time Cranberry Sauce
Not too sweet.
3 c. apple cider
3/4 c. sugar
4 cinnamon stickes
1 tbls. grated orange zest
2 1/2 c. cranberries
Bring the 3 c. apple cider to a boil, simmer and reduce by 1/2. This will take an hour or two.
Once the cider is about 1 1/2 c. add sugar, cinnamon and orange zest and simmer for 15 minutes.
Remove the cinnamon sticks and add the 2 1/2 c. cranberries. Here it gets a bit wild as the cranberries start to pop and splatter, my roommate Sam had to rescue me with the quick placement of a pot lid. So definitely have a quick reflexed friend close at hand for that step.
Cook the cranberries over low heat for about 5 minutes. The sauce will thicken a bit, but it will thicken even more once chilled. I put mine in the freezer, but you can make this a couple of days ahead and simply keep it in the fridge.
